  • 1 (2-pound) tomahawk ribeye steak
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup crumbled blue cheese
  • 1/4 cup chopped fresh parsley

Preheat your smoker to 250 ℉.

Season the steak with olive oil, salt, and pepper.

Place the steak in the smoker and cook for 1 hour, or until the internal temperature of the steak reads 125 ℉ for medium-rare on your Instant Read Thermometer.

Remove the steak from the smoker and let it rest for 10 mins.

Meanwhile, combine the butter, blue cheese, and parsley in a small bowl.
