Stuffed Lamb with Spinach and Pine Nuts

Stuffed lamb is an easy way to serve an elegant meal for any occasion.This boneless stuffed lamb is filled with spinach, garlic, feta cheese and pine nuts. Lamb is one of those meats where you love it and these are the perfect compliment to this flavorful roast lamb.

Ingredients

For the Lamb

  • 1 lamb loin roast, about 1.7-2kg, boned
  • 2 tbsp olive oil
  • 2 garlic cloves
  • 250g young spinach
  • 3 tbsp pine nuts
  • 150g feta cheese
  • sea salt and freshly ground black pepper, crumbled

For the Dressing

  • ½ large cucumber, peeled, deseeded and sliced into rings
  • 150ml natural yoghurt
  • Small bunch of mint, shredded
  • 1 tbsp pomegranate molasses, to taste
  • 1 lemon, zested, squeeze of lime

Practice

In a medium bowl, add 1 tablespoon oil, spinach, garlic, feta cheese and pine nuts. Season and stir to combine.

Place the lamb on a plate, flesh side up, and season with salt and pepper. Place the spinach mixture in the middle of the meat, roll up lightly, and tie with string at intervals.

Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Roast lamb until the outside is browned, about 4-5 minutes.

Preheat oven to 190°C (374°F).

Arrange the lamb on the rack of the roasting pan and season. Transfer baking sheet to oven and cook until internal temperature reaches 52°C (125°F, medium rare), about 45-55 minutes. Use the JoyOuce Instant Read Thermometer to measure cooking temperatures quickly and efficiently.

Meanwhile, mix all the dressing together and season to taste.

Cut the lamb into thick slices, serve with the dressing and enjoy.
