Prep Time Cook Time Servings
2 hours 20 mins 4

Ingredients

  • 1 pound sirloin
  • 1 pound grape tomatoes
  • 8 long thick sprigs rosemary
  • 1 tbsp olive oil
  • 4 cloves of garlic
  • 1/4 tsp freshly ground black pepper
  • 1/2 tsp salt
  • 1 tsp finely grated lemon zest

Practice

step 1

Rinse and dry the rosemary. Strip the rosemary leaves from each sprig, leaving 1 inch of leaves attached at the top, and reserve the leaves.

step 2

Place the reserved rosemary leaves in a small food processor and add the garlic, olive oil, salt, pepper, and lemon zest. Pulse the marinade until they are finely chopped.

step 3

Pour the marinade into a zip-top plastic bag. Place in the refrigerator to marinate for at least two hours.

step 4

Preheat grill to medium-high heat. Remove beef cubes from the marinade and thread onto rosemary skewers. Alternate beef and tomatoes, roughly 3-4 pieces of beef per skewer or until rosemary skewers are filled.

step 5

Place the kebabs on the grill and roast for about 3 mins per side or until instant read thermometer reads your preferred doneness.

step 6

Serve the kebabs on a plate and with a fresh green salad. Enjoy!
