Pork belly burnt ends

Pork belly burnt ends are a classic in BBQ recipes. The pork belly is seasoned with delicious dry rub and secret BBQ glaze, followed by two grilling procedures, giving the pork belly a wonderfully smoky flavor and will practically melt in your mouth.

Ingredients

  • 3 pounds skinless pork belly
  • 2 tbsp olive oil

Dry Rub

  • 1 tsp smoked paprika
  • 2 tsp chili powder
  • 1 packed tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • 1 tsp salt
  • 1 tsp cumin

BBQ Glaze

  • ⅔ cup BBQ sauce

  • 2 packed tbsp brown sugar
  • 3 tbsp butter

    Practice

    step 1

    Preheat smoker or grill to 225°F.

    Add all dry rub ingredients to a medium bowl and mix well.

    Cut the pork belly into about 1-inch cubes and place in a large bowl. Add the olive oil and stir to coat the pork belly cubes thoroughly with olive oil. Add the dry rub and mix well, making sure all sides of the pork belly pieces are seasoned.

    Transfer the seasoned pork belly cubes to the grill and roast for about 2.5 hours, until the meat is dark red.

    Make the BBQ glaze. Add brown sugar, butter, and BBQ sauce to a medium bowl and mix well.

    Transfer the pork belly cubes to a disposable aluminum pan, add the BBQ glaze and mix until all cubes are evenly coated.

    Cover with aluminum foil, place the pan on the grill, and bake for an additional 2 hours, or until instant read thermometer reads 200°F inside the pork belly.

    Remove the pan from the grill and let it rest at room temperature for 10 mins before serving.

    Tip:

    1. Freeze the pork belly for 30 mins to make it easier to cube.

    2. Pork belly burnt ends pieces are great for pasta, macaroni, and as a filling for burgers!
