Grilled Steak Pinwheels

Wrapping steak with prosciutto, cheese, pesto, and basil leaves is an ideal flavor combination in itself. These Grilled Steak Pinwheels are beautiful before cooking and savory when cooked.

Ingredients

  • 1 whole flank steak, about 2.5 lb
  • 1 tbsp kosher salt
  • 1 tbsp lemon juice
  • 1 tbsp ground black pepper
  • 2 ½ ounces prosciutto sliced
  • 9 slices provolone cheese
  • 2 tbsp pesto
  • 12 fresh basil leaves

    Practice

    step 1

    Place the flank steak on the work surface and cover it with plastic wrap. Tap the steak lightly with a meat mallet until it is less than 1/2 inch thick.

    Season both sides of the steak with salt, lemon juice, and pepper. Next, add a layer of prosciutto slices to the steak followed by a layer of provolone cheese to the steak. Finish brush with pesto and top with basil leaves.

    Carefully roll the flank steak tightly and tie it with butcher twine at 6 or 7 places. Slice between the twine to separate into 6 to 7 pinwheels.

    Preheat grill to 400℉. Grill the pinwheels cut side down, flipping once, until pinwheels reach an internal temperature of 120°F (or your preferred doneness). Using a meat thermometer is a quick and efficient way to measure cooking temperature.
