
Wrapping steak with prosciutto, cheese, pesto, and basil leaves is an ideal flavor combination in itself. These Grilled Steak Pinwheels are beautiful before cooking and savory when cooked.

Ingredients
- 1 whole flank steak, about 2.5 lb
- 1 tbsp kosher salt
- 1 tbsp lemon juice
- 1 tbsp ground black pepper
- 2 ½ ounces prosciutto sliced
- 9 slices provolone cheese
- 2 tbsp pesto
- 12 fresh basil leaves
Practice
step 1Place the flank steak on the work surface and cover it with plastic wrap. Tap the steak lightly with a meat mallet until it is less than 1/2 inch thick.
step 2Season both sides of the steak with salt, lemon juice, and pepper. Next, add a layer of prosciutto slices to the steak followed by a layer of provolone cheese to the steak. Finish brush with pesto and top with basil leaves.
step 3Carefully roll the flank steak tightly and tie it with butcher twine at 6 or 7 places. Slice between the twine to separate into 6 to 7 pinwheels.
step 4Preheat grill to 400℉. Grill the pinwheels cut side down, flipping once, until pinwheels reach an internal temperature of 120°F (or your preferred doneness). Using a meat thermometer is a quick and efficient way to measure cooking temperature.
step 5Let rest for 10 mins before slicing. Enjoy!
