This recipe is easy to make and can be cooked on the grill or in the oven. The lamb chops are marinated in a simple mixture of olive oil, lemon juice, garlic, and mint, then grilled until they're cooked to your desired level of doneness. The mint pesto is made with fresh mint, pine nuts, Parmesan cheese, and olive oil. It's a delicious and refreshing sauce that pairs perfectly with the grilled lamb chops.

Ingredients

  • 1 pound lamb chops, trimmed
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh mint
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

For the mint pesto

  • 1 cup packed fresh mint leaves
  • 1/4 cup pine nuts
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

    Practice

    step 1

    To make the mint pesto, combine all of the ingredients in a food processor and pulse until smooth.

    Season the lamb chops with salt and pepper.

    In a large bowl, whisk together the olive oil, lemon juice, garlic, and mint.

    Add the lamb chops to the bowl and toss to coat.

    Marinate the lamb chops for at least 30 mins, or up to overnight.

    Preheat your grill or oven to medium-high heat.

    Grill or bake the lamb chops for 5-7 mins per side, until an instant-read thermometer inserted into the thickest part of the lamb reaches 125°F (medium rare) or until they're cooked to your desired level of doneness.

    TIPS:
    1. If you don't have a grill, you can bake the lamb chops in the oven. Preheat your oven to 400 ℉ and bake the lamb chops for 10-12 mins per side, or until they're cooked to your desired level of doneness.
    2. If you don't have fresh mint, you can use dried mint. Just use half the amount of dried mint as you would fresh mint.
    3. If you don't have pine nuts, you can use walnuts or almonds.
    4. You can also add other herbs to the mint pesto, such as basil, parsley, or tarragon.
    5. Serve the lamb chops with your favorite sides, such as roasted vegetables, rice, or potatoes.
    6. To make the mint pesto ahead of time, store it in an airtight container in the refrigerator for up to 3 days.
