Fried Chicken and Waffles

Chicken and waffles

This classic chicken and waffles are soul food for us! The marinated boneless fried chicken is crispy and juicy, with tender meat, and it tastes amazing with fluffy and tender golden waffles! Whether it's breakfast or dinner, it's the perfect combination.

Ingredients

For the Waffles

  • 2 cups (300g) all-purpose flour
  • 2 tablespoons white sugar
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 3/4 (414ml) cup milk
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • cooking spray
  • maple syrup, for serving

    For the Chicken

    • 8 skinless boneless chicken thighs
    • 2 cups buttermilk
    • 2 teaspoons kosher salt
    • 1 tablespoon garlic powder
    • 1/2 teaspoon onion powder
    • 2 teaspoons paprika
    • 1 1/2 teaspoons ground black pepper
    • 2 cups (300g) all-purpose flour
    • vegetable oil, for frying

    Practice

    Waffles:
    step 1

    In a medium bowl, add flour, sugar, salt and baking powder and mix well. In another bowl, whisk together eggs, melted butter, and milk.

    Slowly add the dry ingredients to the wet ingredients, stirring until well combined to form a smooth batter.

    step 3

    Heat up the waffle maker. Once the waffle maker is hot, spray lightly with cooking spray and spoon batter into the maker. Cook waffles until golden and crisp, about 3-5 mins (follow your own waffle maker instructions). Put on a plate when cooked.

    Fried Chicken:
    step 1

    In a large sealable bowl, combine buttermilk, 1 teaspoon salt, 1 teaspoon pepper, paprika, garlic powder, onion powder. Add all the chicken, mix well, make sure all chicken is completely coated with the buttermilk mixture, then seal. Place in the refrigerator to marinate for at least 1 hour (lactic acid will tenderize the chicken), no more than 4 hours.

    step 2

    In a medium bowl, combine the flour, 1 teaspoon salt and 1/2 teaspoon pepper. Remove the chicken from the marinade in batches, shake off excess, then dip the chicken into the seasoned flour mixture, making sure the chicken is well coated with flour mixture on the skin.

    step 3

    In a large heavy bottom pot, add vegetable oil, at least 2 inches deep, and heat the oil to 325°F. Fry the chicken in batches for 8 - 10 mins, or use JoyOuce digital cooking thermometer to check the thickest part of the chicken, until the internal temperature reaches 165℉. Remove and place on a baking sheet with a wire rack to drain excess oil.

    step 4

    If desired, reheat the waffles. Serve warm waffles on a plate, top with fried chicken, drizzle with maple syrup, and enjoy!
