Eggless Mocha Tres Leches Cake

Ingredients
For Cake Batter
- 1 cup all purpose flour
- 1⁄2 cup cocoa powder
- 1 teaspoon baking powder
- 1 cup yogurt
- 1⁄2 teaspoon baking soda
- 1⁄2 cup vegetable oil
- 3⁄4 cup castor sugar
- 1 teaspoon vanilla extract
For Tres Leches Syrup
- 1 cup milk, warm
- 2 tbsp cocoa powder
- 2 tbsp coffee powder
- 1/2 cup fresh cream
- 1⁄2 cup condensed milk
For Cream Topping
- 1 cup whipping cream
- 2 teaspoons Cocoa powder
Additional Syrup(Optional)
- 1 cup milk, warm
- 2 tbsp cocoa powder
- 2 tbsp coffee powder
- 1/2 cup fresh cream
- 1⁄2 cup condensed milk
Practice
step 1Preheat oven to 180°C (356°F).
step 2Combine flour, cocoa powder and baking powder in a large bowl. Set aside.
step 3In another large bowl, add the yogurt and baking soda and whisk until slightly frothy. Then add the vegetable oil, sugar, and vanilla extract, and mix until well combined. Finally pour in the dry mixture and stir with a cake spatula until they are well combined to form a brown batter.
step 4Line a 9x9-inch square cake pan with parchment paper and grease the top with vegetable oil. Then transfer the batter to the cake pan.
step 5Place the cake pan in the oven and bake at 180°C for 30 mins. An instant read thermometer can be used to check that the inside of the cake has reached the desired temperature.
step 6Make Tres Leches syrup.In a large bowl, add condensed milk, cream, warm milk, coffee powder and cocoa powder, mix well.
step 7Poke a few holes in the cake with a fork while it is still warm after baking. Slowly pour the Tres Leches syrup over it so that the cake is submerged in the liquid.
step 8Put the cake pan in the refrigerator and refrigerate for 3-4 hours to allow the cake to fully absorb the chocolate milk.
step 9Combine the whipping cream and cocoa powder in a large bowl, beating them together until it reaches stiff peaks.
step 10Take the cake out of the refrigerator and spread the chocolate cream evenly on the cake with a spatula.

Sprinkle the top of the cake generously with cocoa powder, then cut into small pieces and place in a bowl. Drizzle the additional syrup around the cake and serve.
