Caribbean Chicken

This spicy chicken recipe is perfect for summer. We use jalapeños for seasoning, which guarantees a spicy, original taste. The lemon juice in the marinade makes the roasted chicken tender and juicy.


  • 16 oz chicken
  • 4 medium green onions, sliced
  • 1-2 jalapeno chilis, seeded and chopped
  • 1/3 cup lemon juice
  • 1/4 cup honey, warmed slightly to soften
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 2 tsp dried thyme
  • 2 tsp olive oil

Add the onion, jalapeno chilis, lemon juice, honey, ground allspice, ground nutmeg, and dried thyme to a bowl and mix well.

Put chicken in a large bowl. Pour the marinade over the chicken and spread it evenly. Refrigerate for at least 2 hours.

Preheat oven to 400°F.

Add olive oil to frying pan and heat frying pan to medium-high heat.

Remove chicken from marinade, place in skillet and fry for 3-4 minutes per side.

Put the skillet with the chicken in the oven and coat it with the marinade one more time during the cooking process. Cook for about 30 minutes or until the JoyOue instant read thermometer reads the internal temperature of the chicken to 165°F.

Cool it, serve on a plate and enjoy.
