Baked Salmon with Cranberry Thyme Crust is elegant and ready in just 30 minutes! Coated in a breadcrumb mixture of dried cranberries, thyme, pepper, and more before baking for a delicious crunch.

Ingredients

  • 4 6 oz salmon fillets, skin on
  • ¾ cup panko breadcrumbs or fresh breadcrumbs
  • ¼ cup dried cranberries, chopped
  • ¼ cup shallot, chopped
  • 3 tbsp melted butter, divided
  • 2 tbsp fresh thyme, chopped
  • 2 tsp lemon juice
  • ⅛ tsp salt
  • ⅛ tsp ground pepper

    Practice

    step 1

    Preheat oven to 375°F.

    Grease a baking sheet.

    step 3

    Season salmon with salt and pepper. Place skin side down on a baking sheet.

    step 4

    In a small bowl, combine panko breadcrumbs, cranberries, shallots, 2 tablespoons butter, thyme, lemon juice, salt, and pepper. Stir well.

    Spoon the breadcrumb mixture onto the fleshy side of the salmon and use the back of the spoon to spread the mixture evenly over the salmon, covering the entire surface area. Drizzle with 1 tablespoon melted butter.

    Bake for 20 mins, until topping is golden, or until internal temperature reaches 125℉ using an instant read thermometer.

    It can be served with vegetable salad and baked potatoes. Enjoy!
