Ingredients
- 4 6 oz salmon fillets, skin on
- ¾ cup panko breadcrumbs or fresh breadcrumbs
- ¼ cup dried cranberries, chopped
- ¼ cup shallot, chopped
- 3 tbsp melted butter, divided
- 2 tbsp fresh thyme, chopped
- 2 tsp lemon juice
- ⅛ tsp salt
- ⅛ tsp ground pepper
Practice
step 1Preheat oven to 375°F.
step 2Grease a baking sheet.
step 3Season salmon with salt and pepper. Place skin side down on a baking sheet.
step 4In a small bowl, combine panko breadcrumbs, cranberries, shallots, 2 tablespoons butter, thyme, lemon juice, salt, and pepper. Stir well.
step 5Spoon the breadcrumb mixture onto the fleshy side of the salmon and use the back of the spoon to spread the mixture evenly over the salmon, covering the entire surface area. Drizzle with 1 tablespoon melted butter.
step 6Bake for 20 mins, until topping is golden, or until internal temperature reaches 125℉ using an instant read thermometer.
step 7It can be served with vegetable salad and baked potatoes. Enjoy!
